Hyatt Regency Tamaya Resort & Spa has announced its signature restaurant, Corn Maiden, has opened for the season. Corn Maiden features a farm-to-table concept with regionally-inspired cuisine and fresh ingredients from the resort’s on-site garden.

“We are thrilled to welcome guests back to Corn Maiden,” said Nate Larsen, Executive Chef. “Our team has thoughtfully curated a menu that honors local culinary traditions. We’re proud to showcase the vibrant flavors of the Southwest.”

The menu includes new dishes such as House-Made Whipped Ricotta with Tamaya Garden Herbs and Honey, Roasted Corn Bisque and Hay Roasted Chicken with Butternut Squash Purée. The resort’s gardens supply items such as onions, green beans, tomatoes, peppers, cactus fruit and beets. The restaurant also features a cocktail program with house-made shrubs and New Mexican distilled spirits, including the Honey Lavender Margarita.

Corn Maiden will be open for dinner Wednesday through Sunday from 5:30-9 p.m. Reservations can be made on OpenTable.
